My family absolutely loves chicken and potatoes. Any combination of the two and it’s a winner winner chicken dinner at our house. It doesn’t matter the type of chicken (breasts, or thighs) or the type of potatoes – it will be eaten.

Obviously, you know what chicken and potatoes are, but do you know what a one pot meal is? Well, that’s exactly what these Instant Pot chicken and potatoes are; a one pot meal. This true one pot meal allows you to make everything right in your Instant Pot. There is no need to dirty another pan, cook your food at separate times, or have to wait hours for your meal to be done. In fact, this recipe only takes 15 minutes to cook for both the potatoes and chicken together.

Additionally, the olive oil, lemon juice, garlic, dijon mustard, salt, and pepper give these chicken and potatoes a deliciously zesty herb and garlic taste.

Instant Pot Chicken and Potatoes Ingredients

  • 2 to 3 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil, divided
  • 1 cup chicken broth
  • 2 to 3 pounds potatoes cut into large, equal pieces
  • 1 lemon, zested and juiced
  • 1 tablespoon dijon mustard
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • ¼ cup grated parmesan cheese
  • Salt and pepper, to taste

What Potatoes Should I Use?

When in doubt, always go with the classic Russet potatoes. These potatoes are great for almost any dish you make with them. However, I personally chose to use red and Russet potatoes to give my dish some variety. Additionally, red potatoes offer much more nutritional value. If you can use red, I would use red.

Can I use Any Chicken?

You can use any chicken you like; however, cooking times will be different depending on the chicken you are using. Here is a time breakdown to help you out:

  • Boneless skinless chicken breast: Cook for 18-minutes. Even without the bone, it is a thicker cut of chicken.
  • Chicken legs: Even with the bone, these would still take the 15-minutes.
  • Bone in Chicken Thighs: Increase your time to 18-minutes.

When in doubt, add a couple more minutes to the recipe to ensure the chicken is completely done.

How to Make Instant Pot Chicken and Potatoes

This recipe is actually really easy to make, and it doesn’t require a lot of steps. So, if you are a beginner, this is a great place to start!

Step 1 Season the chicken. Sprinkle chicken thighs with salt and pepper on both sides.

Step 2 Sauté the chicken. Heat electric pressure cooker on the saute setting until “hot.” Add one tablespoon of olive oil. Carefully place the chicken in the pot and brown on both sides. There is no need to cook the chicken through. Remove the chicken and keep warm.

Step 3 Deglaze the inner pot. To prevent a burn notice, you will want to deglaze the bottom of the electric pressure cooker using the chicken stock and a wooden spoon, scraping to remove any browned pieces.

Step 4 Place chicken in Instant Pot. Return the chicken to the pot, placing around the edges.

Step 5 Season the potatoes. In a large bowl, toss the potatoes with remaining olive oil, lemon juice, garlic, dijon mustard, salt, and pepper. Transfer potatoes to the electric pressure cooker and place over chicken.

Step 6 Seal and cook. Seal the pressure cooker lid and set the valve to sealing. Program the pressure cooker on “manual” or “pressure cook” for 15 minutes. Switch the valve to venting for a quick pressure release.

Serve the chicken and potatoes topped with parmesan cheese.

How to Store Leftovers

You can store your leftover chicken and potatoes in the refrigerator for 2 to 3 days. Simply put it in a sealed container or a ziplock bag when it has cooled.

Can You Freeze Chicken and Potatoes?

Absolutely! You can freeze your chicken and potatoes to keep it for longer if you would like. However, keep in mind that freezing meat does tend to dry it out, so when reheating your chicken, you will want to first let it thaw and then warm it with butter.
