Are you in the mood for a Mexican Cuisine? I love Mexican food that’s for sure. But, going out to a Mexican restaurant every time I have a craving is not financially feasible. So, I decided to start making gourmet Mexican dishes right at home. This Instant Pot Mexican Casserole is super easy and absolutely delicious!

Easy dinners that come together quick are my favorite. I love being able to get a flavorful dinner on the table in under 30 minutes. It’s the best! This Instant Pot Mexican Casserole is one of those on the table quick recipes that everyone seems to love.

What is Mexican Casserole?

A casserole in the U.S. is usually a baked food with 3-main ingredients. It has some kind of meat, various chopped veggies, and some kind of starchy binder such as flour, potato, or pasta. Additionally, a casserole has some kind of crunchy or cheesy topping.

This Mexican Casserole fits the description because it is made with ground beef as the meat, olives and cilantro as the veggies, and a starchy binder of tortillas. Then, it is topped with 3-cups of cheddar cheese. And, we can’t forget about the delicious enchiladas sauce that makes this recipe a Mexican dish.

Instant Pot Mexican Casserole Ingredients

The ingredients for this recipe will make enough for 4 people. Here is what you need:

  • 1 lb ground beef
  • 2 cups red enchilada sauce
  • 3 cups cheddar cheese grated (divided)
  • 10 corn tortillas cut into strips
  • Sour cream optional garnish
  • Cilantro optional garnish
  • Black olives optional garnish

Instant Pot Mexican Casserole

Ground beef – The leaner the ground beef you use, the less fat you will have to drain off. You can also use ground turkey or even pork here, if you’d like.

Enchilada sauce – Grab a can of enchilada sauce to go in this Mexican casserole. Or you can try your hand at homemade enchilada sauce! It’s super easy.

Cheese – I like cheddar here but you can use whatever cheese you prefer.

Corn tortillas – The tortillas help make this casserole more filling. Grab a small bag of corn tortillas for this recipe.

Extras – Cilantro, black olives, jalapenos, and sour cream are great additions to this casserole!

How to Make Instant Pot Mexican Casserole

You will need about 5-minutes prep time and 3-minutes of cook time. So this recipe really won’t take you long at all. Here’s what you need to do:

1. Turn your Instant Pot on sauté mode. Brown your beef.

2. Once the meat is browned, pour in the enchilada sauce. Mix well until fully incorporated.

3. Pour in 1.5 cups of cheese, and all of the sliced tortillas. You can also add black beans, corn, or black olives! Anything you know your family will enjoy!

4. Stir everything well at this point until completely incorporated.

5. Pour in the remaining cheese, and add the lid to the Instant Pot. Close the valve.

6. Cook on “High” for 3 minutes to melt the cheese. Release the pressure manually.

7. Once done, serve with more olives, sour cream, and/or cilantro as garnish! Enjoy!

How to Store Leftovers

You can store leftover Mexican Casserole the same way you would store any other leftovers. Simply put it in a container with a lid or in a ziplock back. Then, place it in the refrigerator. It will be good for about 3 to 5 days.

Can You Freeze Instant Pot Mexican Casserole?

Most casseroles can be frozen as long as they do not contain cream cheese. Since this recipe does not use cream cheese, you are in the clear! To freeze your Mexican Casserole, let the casserole cool completely, first. Then, freeze it in an airtight container or freezer bag. Your casserole can last up to 6-months in the freezer if stored properly.

What Do I Do If the Casserole is Dried Out?

Occasionally, after freezing or refrigerating a casserole, it can get dried out. The best way to fix a dried out casserole is to add a little liquid. Simply place the casserole in a oven safe dish, pour a few cups of hot chicken or beef broth over it, cover it, and let it sit for a minute. Then, heat it up in the oven or microwave. Salsa is also a good option when casseroles are dried out.
