Instant Pot Chicken Tostadas

One of the most common questions we see is – what can I make in my Instant Pot with chicken? The answer is anything! Chicken is so versatile and always makes a great dinner. One of my favorite ways to use fresh or leftover chicken? Baked chicken tostadas!

Tostadas can be made with ground beef, steak, chicken, or any other meat you would like. Today, I am going to teach you how to make Instant Pot Chicken Tostadas! Whether you want snacks for the kiddos or a main dish for dinner, tostadas are a household favorite.

What are Tostadas?

Tostada is actually a Spanish word that means toasted. In Latin America, it is the name of various local dishes that are toasted or use an ingredient that is toasted as their main base of their recipe.

A tostada refers to a flat or bowl-shaped tortilla that is deep fried or toasted. It is then topped with ingredients such as chicken, steak, or ground beef, cheese, and optional fresh veggies.

What is the Difference Between a Taco and a Tostada?

Tacos and tostadas are actually pretty different. Many people think they are both Mexican dishes, but they actually aren’t…

Tacos are Mexican snack foods. They are made with a small tortilla with rice, beans, cheese, diced vegetables, and salsa. However, a tostada is a flat tortilla that has been fried or toasted, and it is actually a cuisine found in Latin America not Mexico.

Therefore, the major difference is where the food originated and how it is made.

Are Tostadas Healthy?

If you are frying your tortilla, it isn’t necessarily the healthiest option. These Instant Pot Chicken Tostadas are made with chicken, corn tortillas, cheese, and some onions. So, if you want to make it a healthier snack, try the following:

  • Bake your tortillas instead of frying them.
  • Use whole wheat tortillas instead of corn tortillas.
  • Add some fresh veggies on top.

Step 2 Toast tostadas: Then, rub olive oil onto the corn tortillas and line on a baking sheet. Place in oven to toast for a few minutes.

Step 3 Cook chicken in the Instant Pot: While the tortillas are in the oven, cook your chicken breasts in the instant pot as you would with Instant Pot BBQ Chicken. Set your pressure cooker for 10 minutes. Allow it to naturally release 10-minutes.

Step 4 Add BBQ Sauce: Next, toss the shredded chicken in the BBQ sauce.

Step 5 top tortillas: Pull out the tray of tortillas, and spread some of the BBQ chicken mixture onto each tortilla. Next, top each tortilla with the shredded cheese.

Step 6: Melt the cheese: Place back into the oven until the cheese is melted and bubbling.

Step 7 Finish it off: Finally, top with green onions and cilantro to serve!

How to Store Leftovers

You really do not want to store a fully made tostada in the fridge. One of two things will happen: your tortilla will get hard or your tortilla will get soggy.

If you want to store leftovers, keep each ingredient in a separate baggie or container. For example, place shredded chicken in one container, cheese in another, and cilantro in a completely different container. Store your tortillas in a ziplock bag away from outside air.

When you want to make a tostada, you will need to toast the tortilla and add your toppings as you would above. You can then place your tostada in the oven or microwave to melt your cheese.
