Instant Pot Chicken Taquitos

In my house, we usually have Mexican food at least once a week. I have to be honest, this usually is Americanized tacos for Taco Tuesday. But, every now and then, I branch out with some truly traditional Mexican cuisine. I think these Instant Pot Chicken Taquitos have become my new favorite Mexican dish to make. They are super easy to make and a big hit with everyone in the fam!

What are Instant Pot Chicken Taquitos?

I am sure you have heard of taquitos before, and probably bought those boxes of frozen taquitos from the freezer section of your local grocery store. Well, as much as I love the ease of the frozen taquitos, they just aren’t as flavorful as homemade chicken taquitos.

These Instant Pot Chicken Taquitos are an easy snack or to make for dinner. Corn tortillas are filled with deliciously seasoned Mexican chicken, salsa, onions, seasoning and cheese. They are then rolled up, placed in the oven, and cooked until crisp.

These tasty Mexican-style snacks are quick to make and yummy to eat!

Instant Pot Chicken Taquitos Ingredients

To make these delicious taquitos, you will need a few ingredients and some Mexican seasoning. Here’s what you need:

  • 2 Tbsp. Tejan seasoning 
  • 3-4 pounds of chicken breasts
  • 2 Limes, halved
  • 2 tablespoons canola oil
  • 1 cup chicken stock
  • 1 cup salsa 
  • Mexican seasoning bouillon 
  • 1 8oz package of cream cheese 
  • 2 cups monterey jack cheese, shredded 
  • ½ cup diced red onion 
  • 2 tbsp. Green onions, chopped 
  • 1 cup Salsa ( medium ) 
  • 15 ( 6 inch ) tortillas 
  • Garnish with Spicy Chili Lime seasoning

How to Make Instant Pot Taquitos

You will make the majority of your chicken taquitos in your Instant Pot, however, you will need to crisp them up in your oven. Follow the steps below for a deliciously, easy dinner.

Step 1 Season the Chicken

Season chicken on both sides with Tejan seasoning. Then, squeeze lime juice from the lime halves onto chicken breasts.

Step 2 Sauté the Chicken

Set 6 or 8-qt Instant Pot® to the high saute setting. Add canola oil and chicken, and cook until evenly golden brown, about 2-4 minutes. Flip the chicken and cook for an additional 2-4 minutes on the other side. Then, remove the chicken from the pot and set aside.

Step 3 Pressure Cook

Place metal trivet into the pot. Then, add the chicken stock,  1 cup of salsa, and the chicken on top of the trivet. Select manual to high, and set for 10 minutes. 

Step 4 Natural Release

When finished cooking, naturally release pressure for 10 minutes. Then, flip the release valve to release the rest of the pressure.

Step 5 Let Cool

You will need to let the chicken rest until cool. It will be easier to shred and stuff into tortillas when it is cooled.

Step 6 Stuff Tortillas

Use two forks to shred the cooled chicken. Place the chicken in a large bowl. Add your softened cream cheese, Monterey jack cheese, onions, salsa, and 1 tbsp. Tejan seasoning. Mix to combine.  Spoon 3 tbsp. Of the chicken mixture onto the tortilla and roll it up.

Step 7 Bake to Crisp

Place the taquitos seam down on a parchment covered baking pan. Spray the taquitos with non-stick baking spray. Sprinkle with Spicy Chili Lime seasoning. Bake at 400 degrees for 15-minutes.

How to Store Instant Pot Chicken Taquitos

You can place your taquitos in your refrigerator for 2-3 days. Put them in a Tupperware bowl with a lid, or place them in a ziplock bag. Longer than 2-3 days, your tortillas will be soggy.

If you want them to be fresh each time you make them, store the chicken mixture in a container without stuffing the tortillas. This will allow you to keep the mixture for 5-7 days without your tortillas being soggy.

How to Freeze

Taquitos can be frozen up to 30 days. Place them in a sealable freezer bag laying flat. When you are ready to cook them, just plop them in the oven at 400 degrees for 25 minutes.

Ingredients

    3. Brown each side for 3-4 minutes. Remove from pot.

    5. Add the chicken stock, 1 cup of salsa, and the chicken on top of the trivet. 
    6. Select manual  to high, and set for 10 minutes. 
    7. When finished cooking, naturally release pressure for 25 minutes. 
    8. Let rest until cool. 
    9. Remove the meat from the bone, and skin,  and shred. 
    10. Place the chicken in a large bowl. 
    11. Add your softened cream cheese, monterey jack cheese, onions, salsa, and 1 tbsp. Tejan seasoning.
    12. Mix to combine. 
    13. Spoon 3 tbsp. Of the chicken mixture onto the tortilla and roll it up. 
    14. Place the taquitos seam down on a parchment covered baking pan. 
    15. Spray the taquitos with non-stick baking spray. 
    16. Sprinkle with Spicy Chili Lime seasoning.  
    17. Bake for 15 minutes at 400 degrees.
    18. Allow to cool and enjoy!
