Baked potatoes are one of my favorite sides dishes. They are easy to make and you can load them up with your favorite toppings. Bacon, cheese, sour cream and chives for me, please!

Using your Instant Pot to cook baked potatoes is beyond easy. You only need a few ingredients and they are done faster than if you baked them in the oven.

Ingredients Needed for Instant Pot Baked Potatoes

This is seriously the easiest recipe you could ever have. You only need 3-ingredients!

  • Potatoes
  • Salt
  • Water

What Size Potatoes Should I Use?

You will want all of your potatoes to be roughly the same size. This is because different sized potatoes require different cooking time. For very small potatoes, 12-minutes would be enough. However, for medium potatoes, 15-minutes works. If you have very large potatoes, you will need to adjust your time to 18-minutes. For this recipe, you would want to use medium sized potatoes.

What Kind of Potatoes Should I Use?

Not all potatoes are the same. This is because potatoes all have a different amount of starch. Some are really starchy and some have very little starch.

When you make baked potatoes, you want to use potatoes that are high-starch. So, the best potatoes you can use for baking are the Russet potatoes. If you want a potato with a little more nutritional value, you can also use the Yukon Gold potato.

How to make Instant Pot baked Potatoes

If you have never made anything in your Instant Pot before, this is a great recipe to start with after you do the water test. You literally can’t mess it up. Here’s what you do!

Place in Instant Pot

Step 1: Wash your potatoes and poke them with a fork.

Step 2: Put your trivet in the bottom of your inner pot. Place potatoes onto of trivet (you could also place them right in the inner pot in the water).

Step 3: Next, season potatoes with salt to taste.

Step 4: After your potatoes are in the pot, add 1 cup of water into your inner pot.

Step 5: Then, close the lid, put your valve into the sealing position. Hit the manual or pressure button, and cook for 15-minutes.

Step 6: When your Instant Pot beeps, allow it to naturally release the pressure. This means you do nothing and let it sit until the lid unlocks and the pin drops.

How to Store Leftovers

Unlike baking regular baked potatoes, you do not use tin foil with this recipe. However, if you did, do not store your leftover potatoes in the fridge with tin foil. Keeping foil on can cause bacteria to grow making your potato unsafe to eat.

To properly store your baked potato, you will need to cool it first. You can do this by placing the potato in an ice filled sink or by cutting the potato into smaller chunks to cool. Then, place the potato in a plastic storage container or bag and put it in the refrigerator.

Potatoes can last 3 to 5 days in the refrigerator.

It is not recommended to freeze a baked potato. It will not thaw and cook without being watery. You will most like end up with mashed potatoes instead of a baked potato.
