The one thing I have made in the Instant Pot that I absolutely love is Instant Pot mashed potatoes. They are so much softer and blend so much easier than when I make them on the stove. I feel like they are a great Instant Pot beginner recipe but one that people put off trying.
Let me tell you – they are eassssy to make! (Kind of like my Instant Pot chicken.) Once you make mashed potatoes in the Instant Pot – you may never go back!

Instant Pot Mashed Potato Ingredients
You don’t need much for these tasty mashed potatoes. Here is what you need:
- 3 pounds of potatoes, diced
- 1/2 cup sour cream
- 1 cup of water
- 1/2 cup of milk
- 1/2 stick of butter
- salt and pepper to taste
What Potatoes are Best for Mashing?
I don’t particularly like clumpy mashed potatoes, and most people don’t. But, if you use the wrong potatoes, that is exactly what you are going to get.
Waxy potatoes such as red or white varieties will require much more mashing to become delicious creamy mashed potatoes. Additionally, it could lead to the nasty “potato paste” or “gluey potatoes.”
To get just the right consistency in your mashed potatoes, you will want to use potatoes with a higher starch content. The best ones to use are going to be Russets or Yukon golds. Yukon golds are my favorite, and they have a higher nutritional value.
How to make mashed potatoes in the Instant Pot
This recipe is super easy to make in your Instant Pot. And, it gets done in half the time!
Step 1– First, add diced potatoes to your Instant Pot. You can place these directly in the inner pot.
Step 2– Add the water. You can pour it directly on top of the potatoes.
Step 3– Then, use your “pressure cook” or “manual” button and set for 8-minutes.
Step 4– Finally, do a natural release for 10 minutes and then quick release the remaining pressure. When you remove the lid, drain off half of the water left in the pot.
Step 5– Then, add in sour cream, milk, and butter. Mash your potatoes to the consistency you like.
Step 6– Season with salt and pepper to taste.

How to store leftovers
You can store your mashed potatoes in the refrigerator for 3 to 4 days. Place them in an airtight container and put them in the fridge.
If you don’t plan on eating your mashed potatoes in a few days, you can always freeze them. Frozen mashed potatoes keep for 1-month in the freezer.
Once you thaw out your mashed potatoes, however, you will need to eat them within 24-hours.

Instant Pot Mashed Potatoes
A quick and easy way to make mashed potatoes in the Instant Pot.
Ingredients
- 3 pounds of potatoes, diced
- 1/2 cup sour cream
- 1 cup of water
- 1/2 cup of milk
- 1/2 stick of butter
- salt and pepper to taste
Instructions
- Place diced mashed potatoes in the bottom of the Instant Pot.
- Add the water.
- Put the lid on, set the valve to SEALING.
- Set to manual high-pressure for 8 minutes.
- Allow to come to natural pressure for 10 minutes and then do a quick release of any remaining pressure.
- Remove the lid and drain off half of the water from the pot. Do this by scooping it out with a cup or ladle. Do not attempt to grab the inner pot!
- Add in the butter, sour cream and milk. Mash with a potato masher, fork or immersion blender until desired consistency is reached.
- Season with salt and pepper to taste.
- Allow to cool and enjoy!
