You can ask anyone what the best soup at Olive Garden is and you are sure to get a resounding response, “Zuppa Toscana!” Typical Zuppa Toscana soup is made with bacon, sausage, potatoes, and kale. To make this recipe low carb, it is made with ground pork (sausage), kale, and radishes. So the recipe is a little different than the Olive Garden one, but seasoned in the same way.
Instant Pot Zuppa Toscana Ingredients
With just a few main ingredients and a ton of Italian seasonings, you will have a delicious Zuppa Toscana everyone will love!
- 1 tablespoon extra virgin olive oil
- 1 pound ground pork (sausage)
- A teaspoon fennel seed
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon paprika
- A teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- A tablespoon Italian seasoning
- 2 teaspoons salt
- 2 garlic cloves, minced
- 4 cups chicken stock
- 1 pound radishes, peeled and halved
- 2-3 cups kale or of your choice of low carb leafy greens
- 1 cup heaving whipping cream
Can I Use Potatoes Instead?
If you want to use potatoes instead of the radishes, you can. However, keep in mind that it will no longer be low carb or Keto friendly. I would suggest using a red potato if you choose to use potatoes. Cook time will remain the same.
Can I Add Bacon and Sausage?
If you want to make this recipe more like the traditional Olive Garden soup, you could add sausage and bacon. Ground pork is pretty much sausage though. If you want to add some bacon, I would suggest adding in bacon bits, but you can easily cook up some bacon and throw it in. Adding bacon or additional sausage will not effect the carbs.
How to Make Instant Pot Zuppa Toscana
Follow the steps below to make this super easy and delicious Zuppa Toscana soup!
- Season the ground pork (sausage).
- Set Instant Pot to sauté and cook meat until browned. (Do not drain)
- Add garlic and continue to sauté for a minute.
- Add in radishes and stock and mix.
- Lock the lid in place and set Instant Pot to Pressure Cook on High for 10 minutes.
- Allow to naturally release for 5 minutes, then very carefully, manually release the remaining pressure.
- When ready, open lid and slowly stir in the whipping cream and kale. Salt and pepper to taste.
- Serve warm and enjoy!

How to Store It
Your soup can be stored in the fridge for 3 to 5 days. You will want to wait for it too cool before putting it into a container. I would recommend a Tupperware bowl if storing it in the fridge.
Can I Freeze It?
This Olive Garden knock off is freezer friendly. In fact, it can store for 6-months to a year in the freezer.
To store it in the freezer, let it cool first. Then, ladle the soup into a freezer safe container or freezer bag. It ill expand as it freezes so only fill bags and containers 2/3 of the way full.
