There is something about a warm bowl of soup that brings back childhood memories. Eating tomato basil soup will always bring back memories of sitting at my childhood home dining room table dipping a grilled cheese in the steaming bowl of soup.
What is Instant Pot Tomato Basil Soup?
Instant Pot Tomato Basil Soup is much like the Campbell’s Tomato Soup you get in a can only made from scratch. Instead of just opening cans and warming your soup, you are using real ripe tomatoes, spices, and ingredients to steam a deliciously fresh bowl of tomato soup.
Instant Pot Tomato Basil Soup Ingredients
The ingredients in this recipe serve 4 to 6 people. Here’s what you need:
- 3 pounds ripe vine tomatoes
- 1/4 cup olive oil
- 1 teaspoon salt
- 2 teaspoons freshly ground black pepper
- 1 medium white onion
- 3 tablespoons minced garlic
- 28 oz can fire roasted tomatoes
- 3 cups fresh basil leaves
- 1 teaspoon fresh thyme leaves
- A teaspoon of red pepper flakes
- 1 quart chicken stock
Tomatoes – You need at least 3 pounds of tomatoes for this recipe. You can use any variety of tomatoes that you would like – roma, beef steaks, heirloom. You also need a large can of roasted tomatoes as well. Feel free to use your favorite type of canned tomatoes or whatever you have on hand.
Spices – The spices are pretty basic so feel free to add more or less depending on your taste.
Basil – You also need a lot of basil for this tomato basil soup. I suggest using fresh as it will give you the best flavor.
Stock or broth – You can use chicken or vegetable broth or stock in this recipe.
How to Make Instant Pot Tomato Basil Soup
This delicious Instant Pot Tomato Basil Soup is super easy to make. It takes about 5-minutes to prep and 20-minutes to cook. Just follow the steps below!
Step 1 Sauté your Veggies
Turn your Instant Pot to Saute. If your tomatoes are large, halve or quarter them, place them in the Instant Pot. Add the garlic, onions, olive oil, and salt and pepper, to the
tomatoes and toss together until coated. Cook for 5-7 minutes, stirring often.
Step 2 Pressure Cook
Turn the Instant Pot off and add all remaining ingredients. Lock the lid, turn the steam release vent to ‘sealing’. Set to the manual setting, for 5 minutes at High Pressure.
Step 3 Natural Release
Once time is up let the pressure drop for an additional 10-15 minutes
before opening the lid.
Step 4 Finishing Steps
Blend soup using a hand blender in the pot. Add salt and pepper as needed.
Serve with fresh basil leaves.

How to Store Leftover Instant Pot Tomato Basil Soup
You can simply store your homemade tomato soup in the refrigerator for 3-5 days. Just put it into a Tupperware bowl with a lid.

Can I Freeze It?
This recipe calls for no cream or milk which makes it perfect for freezing. I tend to let the soup cool completely then pour it into freezer bags. You can keep tomato soup in the freezer for 2 to 3 months. If you want to, pour the soup into individual serving size freezer bags.
