Everyone in our family loves Chinese food. It’s the one type of meal that I can put together and no one complains. Of course I thought why not try easy Chinese food in my Instant pot?
Since I’m more experienced with the Instant Pot now, I thought Instant Pot Chicken Lo Mein sounded delicious. I knew the family already loved lo mein, so this was easy enough. I’m excited to share this recipe with you all, I know you’ll love it.
What is Instant Pot Lo Mein?
Instant Pot Low Mein is that same delicious lo mein that you already love, it’s just made at home in the Instant Pot. When it comes to this type of dinner, it’s easy enough to make and doesn’t take much skill level at all.
Lo mein uses noodles along with veggies and sauce to create an amazing tasting dish the whole family loves.
Chicken Lo Mein Ingredients
While I love the Chicken Lo Mein that my local Chinese restaurant makes, sometimes it makes more sense to just make it right at home. Here’s what you’ll need to make this recipe:
- Chicken
- Soy sauce
- Cornstarch
- Pasta
- Hoisin
- Vegetables
Chicken – I use boneless chicken for this recipe, but you can use whatever boneless chicken you can get your hands on. You can switch out the meat to whatever you prefer as well.
Soy sauce – In this recipe, I call for low-sodium soy sauce, you can easily find this at the store. Regular soy sauce works as well but the dish may seem a little salty. You can also try coconut animos as a soy free option.
Cornstarch – Many of you have probably cooked with cornstarch before. If not, it’s just a thickening agent that works well in this dish. It’s nice to know that you can have nice and thick sauce thanks to something as simple as cornstarch.
Pasta – Probably the best part of this meal is that you can use any type of pasta you’d like. I used fettuccine here but you can use whatever type of pasta you have on hand. Just be aware a thinner pasta may stick together a bit more.
Hoisin sauce – This is a very thick sauce that is used as a glaze in Chinese food. This type of sauce will include ingredients like soybean, fennel, and garlic. Overall, its perfect for this dish.
Vegetables – The great thing about this recipe is that you can use whatever vegetables you like. For this easy lo mein recipe I used mushrooms, carrots, snap peas and cabbage. Red peppers and onion would make a nice additional here as well.
What Noodles Are Used in Lo Mein?
Traditional lo mein noodles are used in authentic Chinese dishes. For this recipe I used basic fettuccine noodles since they are similar but hold up better in the Instant Pot. Lo mein noodles cook different as well so be aware of that if you choose to use them for this recipe.
How to Make Instant Pot Chicken Lo Mein
Making your own Chinese food at home is so easy that you might skip the take out forever. You don’t have to worry about dragging the kids out and you can enjoy the taste of comfort food right at home.
Step 1 – To get started, you’ll want to add sesame oil, chicken, mushrooms, garlic, chicken broth, soy sauce, hoisin sauce, and fettuccine Instant Pot in that order.
Step 2 – Go ahead and cook on high pressure for 4 minutes and then do a quick release of the pressure.
Step 3 – You’ll want to mix cornstarch and water in a small bowl then pour into cooked noodles. Then you will break up noodles and toss to combine. Add in carrot matchsticks and snow peas, gently mixing to combine.
Step 4 – Put the lid and let sit for 5-10 minutes. This will soften the carrots and peas but still allow them to have a slight crisp. And the last thing to do is enjoy it!
How to Store Chicken Lo Mein
After you make this dish, you will need to store it in an airtight container in the fridge. It will last 3-5 days in the fridge. But don’t worry – your family will gobble this up before it has a chance to go bad.

Ingredients
- 1 tbsp sesame oil
- 2 medium-sized boneless skinless chicken breasts, cut into 1 inch pieces
- 2 cups mushrooms, sliced or quartered
- 4 tbsp minced garlic
- 2 tbsp low-sodium soy sauce
- 2 tbsp hoisin sauce
- 2 cups chicken broth
- 1 lb fettuccine, broken in half
- 2 tbsp cornstarch
- 2 tbsp water
- 1 cup carrot matchsticks
- 1 cup snow peas
- ½ cup shredded cabbage
Instructions
Add sesame oil, chicken, mushrooms, garlic, chicken broth, soy sauce, hoisin sauce and fettuccine Instant Pot in that order.
Cook on high pressure for 4 minutes and then do a quick release of the pressure.
Mix cornstarch and water in a small bowl then pour into cooked noodles.
