Instant Pot Chicken Burrito Bowls

What do you get when you mix together a few cans, chicken, rice and cheese? Well, Instant Pot chicken burrito bowls of course! These burrito bowls are made completely in the Instant Pot and the full meal is ready is under 30 minutes. Let me show you how to make them!

I’ve mentioned it before but I think Tex-Mex is my favorite food group. I know, I know. It’s not really a food “group” but with recipes like this Instant Pot chicken burrito bowls and pork carnitas, it should be.

These burrito bowls are made all in one pot – your instant pot! They come together quick, under 30 minutes total, and are a complete meal. Everything from the chicken to the rice and even the melty cheese is cooked right in your instant pot. It’s a perfect addition to your weekly menu.

What is a burrito bowl?

A burrito bowl is like a burrito without the tortilla! This burrito bowl meal is made with chicken, rice, beans and diced tomatoes. A little taco seasoning gives this instant pot chicken meal the perfect Mexican inspired flavor.

One of the best things about this easy instant pot dinner (besides it being cooked all in the pot!) is that most of ingredients can be found in your pantry. Besides the chicken and cheese, this is a delicious and easy instant pot pantry meal. To make this dinner you will need:

  • Chicken
  • Taco seasoning
  • Beans
  • Corn
  • Tomatoes
  • Rice
  • Chicken broth
  • Cheese

Chicken – Any type of boneless, skinless chicken can be used in this burrito bowl. I used chicken thighs but breasts or tenders will work just as well.

Taco seasoning – You can buy a taco seasoning packet like McCormicks or make your own. You can customize the spices to your liking too. Like it a little spicier? Add more red pepper flakes.

Canned goods – Black beans, corn and diced tomatoes are what you need for this burrito bowl. Make sure you rinse and drain the black beans before adding them in. The corn and tomatoes can be plain or ones like the fiesta corn and tomatoes with oregano and garlic. You’re choice!

RicePlain long grain white rice is what you need for these burrito bowls. You can use brown rice but you will need to add some cooking time to the meal.

Broth – You can use chicken broth, water or even a chicken bullion with water.

Cheese – Any type of shredded cheese will do. I used a mild cheddar in my chicken burrito bowls.

How to make burrito bowls

Once you have gathered all your ingredients you will also need to grab:

Step 1: Brown the meat – Add some olive oil to the bottom of your pot and put in your diced chicken. Cook for 3-4 minutes on each side using the SAUTE button until there is no more pink. Sprinkle on the taco seasoning and stir to combine.

Step 2: Add the rice, tomatoes and broth – Pour in the can of diced tomatoes with the juice, followed by the uncooked riced. Make sure to rinse your rice before you add it to reduce clumping. Pour in the broth or water and make sure the rice is submerged.

Step 3: Cook – Put the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 5 minutes and then do a natural release. Remove the lid and fluff the rice.

Step 4: Add corn and beans plus cheese – Add in your drained corn and black beans and stir to combine with the rice. Top with the cheese and place the lid back on to have the residual heat melt the cheese.

After 5 minutes, or when your cheese is melted, remove the lid and serve.

How to store leftovers

Store any leftovers in an airtight container in the fridge. This meal will last for about a week in the right container. To eat, re-heat in the microwave. You can add a little bit of water or broth if the rice gets clumpy.

How to freeze your burrito bowls

Cook the recipe as instructed minus the cheese on top and allow to cool completely. You can store the burrito bowls in a ziplock baggy with the air removed or in an airtight glass container.

When you want to eat your chicken burrito bowls allow to thaw in the fridge. Warm in the microwave and top with the cheese just before eating.

An easy one pot dinner made with chicken, taco seasoning and rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pound chicken thighs, diced
  • 1 oz taco seasoning
  • 1 14.5 oz can diced tomatoes, with juice
  • 1 cup of long grain white rice
  • 1 cup chicken broth
  • 1 14.5 oz can black beans, drained and rinsed
  • 1 14.5 oz can of corn, drained
  • 1 cup of cheese of choice, shredded
  • cilantro, sour cream, avocado for toppings

Instructions

  1. Press SAUTE on your Instant Pot and place the olive oil and diced chicken in the pot. Cook for 3-4 minutes per side, stirring frequently, until no pink remains.
  2. Sprinkle the taco seasoning on the chicken and stir to combine.
  3. Add in the tomatoes, rice and chicken broth. Push the rice underneath the liquid.
  4. Place the lid on the Instant Pot, set to SEALING and cook for 5 minutes on high pressure. Allow the pressure cooker to come to natural pressure.
  5. Remove the lid and stir in the corn and black beans. Cover the burrito bowls with cheese and place the lid back on. Allow to melt the cheese with residual heat for about 5 minutes, or until the cheese has melted on top.
  6. Serve with sour cream, sliced avocado and cilantro.
  7. Enjoy!
